Aldolase is a metabolic enzyme that is involved in the process of glycolysis. Glycolysis is a process in which one glucose molecule is broken down into two pyruvate molecules. Aldolase is used in the fourth step, when it cleaves fructose 1, 6-diphosphate into two different three-carbon sugars, dihydroxyacetone phosphate and glyceraldehyde phosphate.

Aldolase is found in a variety of organisms, and the difference
between these organisms can be studied by examining the degree to which
their cDNA and amino acid sequence of the aldolase A gene differ.
